Chicken kotletki

So!?  How was it???????????  :)

My Christmas was very sweet, we celebrated at Vito's mom's house as usual.  We all brought a dish over and I made a jr mistake of eating too much of my mom in law's home made salmon mouse for starters that literally I didn't have room for anything else!  I had to lamely say that I'm saving room for desserts...

I was also tasked with contributing to the holiday meal and I went all "Ukrainian Nostalgia" this year!

I made Chicken balls for starters and a Honey Cake.  Here is the recipe for the Kotletki :)  SUPER EASY!

Getting happy

Ukrainian chicken kotletki (balls)

1lb ground chicken meat
3 slices of bread (white or brown)
1/2 cup of milk
1/2 onion finely chopped
1 green onion chopped
1 large garlic clove finely chopped
1 table spoon of lemon juice
1 tsp dried dill (or fresh)
1 tsp dried basil
2 tbs of oil

Prepare:
Soak 3 slices of bread in the milk then squeeze out the milk from the bread.  Tear the breads into small chunks and throw into the mixing bowl.
Put the ground chicken meat into the mixing bowl.
Crack an egg into he bowl as well as the chopped onion, green onion and garlic.  Add the herbs, salt and pepper.   Mix everything together.  I just use my hands... I always liked squeezing the stuff through my fingers..

Warm up a large pan and the oil.  Make larger or smaller balls from the meat mixture and cook in batches if necessary on medium to low heat.  Few minutes on each side should do it, depending if you made larger or smaller balls.

Make smaller sized balls for starters, or larger burger sized ones and serve as main course with some potatoes and veggies.

WARNING: This is very garlicky.  If you're planning to kiss people later that day who have NOT eaten the same balls, leave out the garlic.  But then again, the balls will be so sad without the garlic.

Peanut Butter Cookies Ice Cream Sandwiches... wow what's a mouthful!

Here is the other cutesy thing I made for the "manly" dinner.  Peanut Butter Cookies Ice Cream Sandwiches!

The recipe inspiration for the cookies came from here and the plating from here.

1 cup of peanut butter (creamy)
3/4 cup of organic brown sugar
1 large egg
3/4 tsp baking soda
pine nuts for flower decoration

Mix all ingredients well.  Put a spoon-full of on the cookie sheet flatten and decorate with pine nuts. 

Bake on a cookie sheet in a warmed up over at 175C (350F) for 8 minutes.  8 minutes ONLY!  Note that cookies will still be completely soft when you take them out of the oven but they will harden in a few minutes.  Don't stick the cookies to bake longer or they'll burn.  (I burned my first batch because I'm not good with authority and decided to bake longer then 8 mins.)

For the ice cream filling I used store bought cinnamon ice cream, mixed it with a bit of pickled ginger syrup.  

Ta-da!

Creamy rice pudding


One of the things that surprised me when I moved in with Vito is that we were not good at cooking together. I guess it never came up because while dating we would eat out on our dates. And because we lived on different continents while we were dating, impromptu cooking sessions after say, watching a movie at someones house never happened. I knew that Vito could cook so I assumed that cooking together would become a regular activity after I moved in...

Well... it didn't quite happen that way. After a few times trying to cook together we both decided that it would be better to just take turns. In our case it was like trying to drive a car together! And I don't mean one person navigates and one person steers, I mean as if two people trying to steer and shift gears TOGETHER. We're just two control freaks. So that was a bit of a surprise to me. In my head I had a vision of us making delicious food together gliding around the kitchen like pairs figure skaters, our dance interrupted only when we would spontaneously drop to the floor to make love every ten minutes. Gosh, you know how sometimes in your head things may seem so nice but in reality they're not so practical? Do you know how hard marble floor is? Ouch!

Anyway, after a bit we figured out a way to sometimes come together in the kitchen in a 'safe' and orderly manner. ;) We figured that we can cook together if each of us is completely responsible for one (or two) dishes. So for example if Vito is making the stakes, and he is better at meat then me (since I apparently don't have enough math knowledge to figure out when to turn it over to the other side), I make the sides. Sometimes when preparing for a dinner party, I'll make the main course and Vito will take care of the starter and dessert.

Now this was a rather easy solution, but what do you do if your partner wants nothing to do with the kitchen and you want to fulfill your fantasy of synchronized cooking?? Well this recipe is perfect for you to get your man (or gal) into the kitchen with you!

Introducing: Super easy Rice Pudding desert.

Now the fun thing about this recipe is that it's super easy, all your partner needs to do is stand and stir! A genius thing about this recipe is that they'll need to stand and stir for about the time it'll take you to make dinner, about 20 mins. Brilliant! So let's get started.

Ingredients:
1 cup of long grain rice
1/2 liter milk
1 table spoon non salted butter
2 table spoons of honey
1 table spoon of brown sugar
1 teaspoon of cinnamon
1 teaspoon of ginger
1/2 teaspoon of cardamon
few drops of Vanilla extract
secret ingredient: slivered almonds

Directions:
Warm up a medium sauce pan on the stove. Throw in the butter and let it melt. Add the rice and stir to get the butter coating the rice until you see rice turn a bit translucent. (About 1 minute) Turn the fire down to small flame. Now you will start to add milk in 1/2 cup at a time. Stir, stir, stir. Keep adding more milk and keep stirring. After about 10 mins stir in the cinnamon, ginger, cardamon, honey and brown sugar. Stir some more. Add 1 cup of boiled water to the mix and let simmer while stirring occasionally for about 10 more minutes. (Add more milk along the way if necessary.) Depending on the rice you use, long cooking or 8 minute rice, it may take longer for you to cook it. Try the rice and if it's ready then you're done, if it's still hard you can continue to add more milk and stir.

You'll probably have to walk away from it to eat dinner so if you want to eat your rice pudding hot, just turn the fire back on stir it for a minute or two add a bit more milk if you want and serve hot. Now before you serve it take some slivered almonds and throw them in, stir and serve! The almonds will add a nice crunch that will contrast nicely with the soft creamy rice.

new year's eve dinner

I have not had a chance to describe the opulence of our New Year's Eve in France. The six of us stayed at an old farm house and cooked up an amaizing multi course dinner. My best friend M was visiting from Chicago with her husband E. What a change this NYE was. Not to long ago my NYE consisted of wild dancing on the beach of some exotic country or other, just 4 years ago M and I were in Costa Rica viewing the fireworks from a beach at Manuel Antonio. Well now we celebrated also in a different country but it was a bit more relaxed. I found it perfect in its own way. Growing up is not so bad.

Starters:

saucisson
taramasalata on blinis
pate'
crevettes
about a million oysters

Main:

roasted chicken with chessnuts
green beans
garden vegetables
thyme roasted potatoes

Cheese course:
french cheese gallore, I will be lost to recount all the cheeses

Desert:
petit fours

Champagne and red wines from Burgundy accompanied the feast.

It was the six of us in a farm house somewhere in the middle of French country side (Ok, a tiny little village called Poligny) and we were thinking about having a very relaxed New Year's Eve, but somhow we still managed to go to beds around 3am. We just got carried away with the deliciousness. It was great!! I would not mind to do a similar stint next year. Just where...?

Christmas Dinner in details...

Starter was a salad of fresh greens with vinegrette, walnuts and grapes. The ham rolls had yummy apple salad inside. The sweet and salty combo was just the thing to get our apetite going!










Next came my Tom Ka Kai soup. I was really glad with how it turned out, I'll put up the recipe later. It was a bit spicier then perhaps expected by the 'general public' as to my horror I heard some people totally started caughing. But I think once they realized that it's stuff for a serious palette they toughened up whiped their tears and ate it.








Main course was done by the hosts. Duck brest with fluffy potatoes, green beens and marinated zucchini, with a chutney of mango, pinaple and peach. Delishious enough to lick your little fingers!













Miele, Vito's lovely cousin, made the desert. Crumble apple pie with cinnamon ice cream!! Yes indeed it was that exciting. I for one, never seen cinnamon ice cream in the US. Perhaps PR/Marketing people have decided that Americans associate cinnamon with warmth and would not like it in an ice cream. Those PR/Marketing people, how dare them decide our lives!?
















Anyway and there you have it, our Christmas Dinner on the farm.

Well to take a break from dieting, let me tell you about a real DUTCH meal I prepared!

And dieting is stupid anyway, I mean I've spent all this time developing my figure, why in the heck would I want to go and ruin all the efforts with dieting!!??!? Like Sofia Loren said, "All you see here is thanks to spaghetti". Smart woman!

So yes, my super DUTCH meal....

My very own rendition of spinazie stomppot met worst. Basically mashed potatoes with spinach and sausage. Yummy! Though it does seem suspiciously familiar to other similar dishes eaten in Russia, Germany... and ... others.

But there you go, I'm like SO totally Dutch now and stuff! :)

What: A story of about half a page to set up "the scene" were you on a beach in Italy? Were you at your aunts house for Christmas? Were you cooking dinner for your guy/girl for the very first time? Just a brief story to let us get in the mood for your dish. Then of course follow with a recipe: ingredients and preparation instructions.

Publishing: It will be 'self published' each recipe will have a copyright: your name on the bottom of the page of your recipe.

Contributors: Send in a one or two sentence "bio" and a picture if you like!! If you are a blogger and would like your blog link included, cool too.

The book will have a bout 30 recipes, 10 starters, 10 main courses, and 10 deserts!

Well I suck, it's official... NEEDLESS to say I did NOT write a cook book in November. Booo!! I did start it... but still... booooo! I'm obviously not capable of doing anything by myself, I NEED to do it together with others.

BUT! Never admit defeat! But when in danger of failure ask for help. Heeeeelp! Anyway I've decided to put out a recipe contest! You guys are all lovely and talented people and from what I see and read, you also like to cook! :) So Tomorrow I'll outline the "rules" and the recipes that rock (and are easy) will be included! But of course nothing is THAT simple muuuaaahahhaha

We are going to have SO MUCH FUN!

Speaking of fun... I just had DE-licious sesame encrusted tuna stake.... mmmmyyuuummmyyyy!! Now i'm going to go have some vito for desert.. excuse me...

La ensalada Russa!

Or in Russian it's called "Salat Olivie", think of it as a salad cocktail since to prepare it you mix a whole bunch of ingredients together.

I remember this salad was the "nail of the table" (the dish that stands out) at every family party. Also the hostess was judged by this salad and no one would even DARE to go buy it in the store. This salad had to be done from scratch.

I remember the happy buzz in the kitchen when every single pot was being used and all the dishes were standing and awaiting to be filled with some kind of delicatessen. I would always want to help, but the privilege had to be earned. And many a times my mom would just send me off to sweep the floor somewhere because food preparation was left to the 'professionals'. If I'd get lucky then I'd be allowed to peel stuff.

I remember one day my mom allowed me to chop the vegetables for the grand Olivie. This is just about THE most important task of preparing the salad since everything has to be chopped in perfect little squares so that the salad comes out looking beautiful. I would just NOT breathe as I sliced the potatoes.

In the end I was SO careful that my mom approved my job and later during the party when Grandma (the ultimate authority) complemented my mom on the beautiful Olivie, my mom announced that it was in fact I who made it. Especially as an eight year old I was beyond proud of myself.

Well skip a "few"years and here I am STILL proud :) hehe The salad I made could in no way be places on the party table because I did not hold my breath this time as I chopped and you can see the definite irregularity in size of the sorta-squares, BUT it is definitely yummi!

ingredients: potatoes, carrots, pickles, ham, and pees + pepper and mayonnaise

prepare:

peel the potatoes and boil them

do NOT peel the carrots, boil them, let cool and then peel them

chop all the ingredients in perfect squares - most important task

add the pees and stir in mayonnaise (preferably home made, if you can't be bothered store bought is ok too!)

some pepper and it's all ready

**If you can grab a kid to help you with the salad do! the kid will be forever thrilled I promise.

Well well well. Just as everything is really lovely and nice I have to go and complicate things!


So.... I must announce that I have decided to make.... a cookbook! I know what you are thinking, you have to be a cook to make a cookbook, but no, I'm making one about WANTING to be a cook. How you like that!? :) And I'm announcing it because than I have to be held accountable to the ENTIRE WORLD! (yáll) Otherwise I'll just laydown on a beachchair and sip virgin strawberry daqueries.


And I'm not allowed to disclose anyfurther pictures but here is one of the beautiful cookie-cakes that we had at AMSTEL HOTEL for High Tea!!!!

Oh! And just to make it even more entertaining... I've decided to give myself a deadline: End of November! THIS November!

So exciting I can't stand it myself!

I'm REALLY behind on all the stories and all the action. It always happens when you have stuff to tell, so you wait to put it together in your head... and end up not talking about it. Ok, so good thing they invented cameras. I'll do a pictorial run through of last week and last weekend:



Saturday: Kayaking with the ladies


Sunday: Hike in the dunes with big Vito



Monday: in the Kitchen with chef Vito. He made yet another incredible Indonesian dish called Babi Pangang. SO GOOD! (Sauce made by him from scratch too!)



Tuesday: making carrot cake for the FIRST TIME in my LIFE!! It came out tasting like... carrot cake! Really!




Wednesday: Supah Faaaahhhbulous dinner with Alexis and friends at a snooty restaurant. Taking advantage of the Restaurant Week in AMSTERDAM!

1 Week down!

The week went really well! I just have to really figure out my new schedule and when its best to do what activity. That however did not throw off my Thursday night lady's night!


Alexis and Face (Alexis calls her that so I can adopt it also for web purposes, though to italianize it, it should be La Faccia, but ok.)


Well miss Face cooked up an amaizing Southern breakfast for dinner! Hash brown with onions, southern omlette with cheddar cheese, tomatoes, spinach and mushrooms!!! I was in charge of the Mimosas, though the girls quickly switched over to harder artillery such as the Screwdrivers... What a great, great evening!


Friday evening I came home and Vito and I immediately got on our bikes and went over to a dinner at Danilo and Gioelli's house for an Italian dinner where yummyness such as mozarella salad and lazagna were served. For desert.... trio of amaizing ice creams (poached pears, strawberry and rasberry) were doing tango with home made mango mousse! YUM-O! (Thanks for the fraise Rach!)

This now is Saturday "morning", well it's 2pm but for our purposes it's morning as we just had breakfast...

Now, after Vito cleans the house and washes the windows etc etc we're going to a Jazz festival! wheeeeee! Ahhhhh...

Caffé a La Tinaja

Do you like drinking coffee? A nice delicious cup in the morning?? Or if it's hot and muggy a nice BIG cup of ICED coffee with a ton of sugar!??? I love it, the other day I used the blended to make a crushed ice cappuccino type thingi and thought that was a bit too much work...

Well these pictures show how they make coffee in a little village somewhere in the middle of Dominican Republic called La Tinaja. This town hardly shows up on a map even. This was taken by Jorge director or Nazarite Children's Missions on their last trip to DR. It's in a town just north of where the organization is helping to build homes and set up a school.

Nazarite Children's Missions really do their stuff and every single donated dollar is accounted for. They literally give you a breakdown of where your donation goes and you can see an actual result! I know organizations like Unicef do tremendous amounts as well, but what motivates me is seeing that even a little bit can make a big difference.

Tira mi su and su and SU!

The tiramisu turned out tasting... yummy! Well my test subjects were Vito and his parents. We stopped by at his parents for a very lovely dinner featuring "Coq au Vin" which is chicken cooked in red wine, super french, and tasted delicious! After dinner the tiramisu came out and I kinda watched them for any signs of "bad tiramisu effects" but all said it tastes good!!! And had seconds... !!

I guess it's hard to mess up something that is made with lady finger cookies and sweet creamy filling. I do know exactly what to fix next time. For one, I thought I'd be able to BEAT skim milk into becoming whipped cream... That didn't work, even after the beating I gave it. Also I could also use a bit more alcohol, my tiramisu came out a bit virgin.

There is no stopping me now!!! Whats next!???? Maybe... carrot cake?

Well before it's Thursday and I still haven't talked about the weekend, I might as well talk about the weekend!

Friday Vito and I went out for some sushi. It's rare that I'm in Amsterdam when its dark, so its easy to forget how beautiful the canals are with all the lights reflecting in them... aahhh...

Saturday yummy bbq!

Sunday I went Kayaking with Alexis and friends to a town a bit North of Amsterdam. There are canals opening into lakes, houses or green fields with chewing cows. Lovely! We kayaked for almost 3 hours and after that were hungry like the chewing cows! Across the street was a tiny town with a big Pancake house...


I had a "Bermuda" pancake with bananas, fudge and ice cream. I'm not usually a sweet tooth person, but after trying my best to keep up with the girls I was famished! Oh yes that's a beer in the back ground. Just because one is having chocolate and ice cream does not mean one should not also have a beer! One is smart!
